The manufacturer harvests the wheat grass while it's young so the gluten has not had a chance to form. I have a delicate stomach, highly allergic to maltodextrin (not in this bar) and any sugar alcohols (not in this bar), and "prebiotic" fiber (not in this bar). Being on a strict low carb, high protein, low calorie diet, I'm desperate for anything crispy or crunchy. This bar was a wonderful delight, with light crispy crunch, and perfect to carry with me as a MR when traveling cross country and out of country (monthly trips). I waited for 48 hours after first eating this bar to see what gut problems would develop: Nothing! Summary: I've died and gone to Heaven! And it tastes "organic", thanks in part to the wheat grass etc etc. It gives you that feeling of wellness that you are eating healthy. It tastes like a sweetened fresh cut lawn, but in a good whey *pun intended. I really enjoyed it. The reason I marked it down to a four and not a five was because it didn't hold me over too well, so I wouldn't recommend doing what I did and using it as a MR bar, but rather a replacement of those candy Isle goodies.
