Dreamfields is delicious pasta with 5g of fiber, only 5g of digestible carbohydrates per serving and a very low glycemic index. Its delectable taste and nutritional benefits make it a healthful option for people with diabetes and a flavorful, nourishing pasta for the entire family.

Dreamfields' unique manufacturing process and fiber protein blend entrap and protect all but 5 grams of the carbohydrates per serving from being digested and therefore lessens post-meal blood glucose rise as compared to regular pasta. Dreamfields contains inulin; a 100% natural prebiotic fiber found in common foods such as Jerusalem artichokes (sunchokes), asparagus, garlic, raisins and chicory root. By providing a food source for the healthy bacteria living in the gut, prebiotics such as inulin may help promote: digestive health, satiety, and calcium absorption. Inulin is a soluble fiber (like that found in oats, dried beans and apples) which means it dissolves in water turning into a gel during digestion. As part of a healthful overall eating plan, consuming enough soluble fiber may help reduce blood cholesterol and glucose levels. Dreamfields Pasta has a very low glycemic index of 13. Dreamfields has all of the flavor and texture of traditional pastas.

This extra space allows the product to move about during transit and can cause the noodles to break. Spaghetti means long, thin strands. It is the most popular type of all pastas and is suited for a wide variety of dishes. Spaghetti can be served with red sauce, like Spaghetti Marinara or with white sauce like Spaghetti Carbonara.

Linguine means "little tongues" which describes its flat, thin shape. A popular linguine dish is with clams, but may also be served with pesto sauce, sugo (tomato sauce) or with chicken.

Elbows are a very versatile cut suitable for soups, salads, or casseroles. Its short, bent shape provides durability to hold up in the American classic macaroni and cheese. Add it to make a hearty vegetable and beef soup or bake it in a tuna-noodle casserole.

Penne Rigate is a short-cut tubular pasta. Penne describes the slanted "quill" shape on both ends and Rigate means with ridges. The ridges capture flavor making this cut applicable to a wide range of sauces from vegetable sauces to meat sauces. Kids may prefer to eat it with just butter and Parmesan cheese.

Lasagna are pasta sheets used to layer in baked dishes. Dreamfields Lasagna has ridges, creating even more crevices to hold sauces and ingredients for even bolder flavor. Traditional meat and tomato sauce layered with ricotta and Parmesan cheeses is the most popular lasagna recipe. Vegetarian varieties and Florentine - made with spinach and white sauce - are delicious options too.

Rotini, a spiral shaped pasta, is the most popular cut for pasta salads, especially those made with an oil and vinegar dressing. Kids love these cork-screw shapes too because they are easy for little fingers to grab and eat!

Angel Hair are heavenly long, thin strands of pasta that cook up in just 5 minutes. Angel hair pairs best with delicate sauces, and is delightful with seafood as well.

How it works:
Dreamfields patent-pending process adds a unique blend of protein and inulin fiber (a 100% natural prebiotic fiber found in common foods such as Jerusalem artichokes (sunchokes), asparagus, garlic, raisins and chicory root) to premium durum wheat semolina, resulting in a pasta with 5 grams fiber per serving (about twice that of regular pasta), a 65% lower glycemic index (GI) than regular pasta (Dreamfields GI = 13; regular pasta GI = 38), and 5 grams digestible carbohydrates per serving, which results in a lower blood glucose rise compared to that following consumption of regular pasta.

Of the 41 grams carbohydrate in each serving of Dreamfields pasta (2 oz. dry or about 5 oz. cooked), all but 5 grams carbohydrates are protected from being absorbed due to the unique patent-pending process used to make the pasta. The unique blend of protein and inulin are balanced to provide functional properties to modify the product’s microstructure and influence starch granule permeability. A matrix is created within the semolina flour, thereby preventing starch-digesting enzymes from cleaving digestible carbohydrates into absorbable monosaccharides. The carbohydrate protected from digestion can pass to the colon where it is fermented, providing many of the benefits of fiber. Aside from reducing starch digestibility, the changes to the pasta’s microstructure and starch granule permeability reduce the GI.

Each batch of pasta undergoes rigid clinical testing to ensure that there truly are only 5 grams of digestible carbohydrate per serving and to ensure the accuracy of the stated GI level. The testing method includes measuring blood glucose response to the whole food in humans to establish the pasta’s glycemic load. This clinical testing is conducted at AMK Clinical Research Facility in Gainesville, Fla., an independent laboratory.
