After doing that, I had to give them a rating of 5. I have had other low carb treats that often taste dry and like cardboard. These carrot muffins were moist and tasty. In addition, they are very quick and easy to make. This makes it easy to whip them up in no time - especially when you want something good to eat and feel that you might "fall off the wagon" and eat something you shouldn't. I took a small amount of cream cheese and mixed it with some Splenda. I spread this on the muffins and it tasted just like cream cheese frosting.
