Bob's Red Mill White Bean Flour is freshly ground on cool and slow turning, century-old stone-buhr millstones from premium quality, small white beans. This White Bean Flour is an excellent ingredient for gluten free baking when combined with other ingredients such as potato starch, tapioca flour and xanthan gum.

High in dietary fiber, magnesium, phosphorus and high quality protein, this nutritious flour has a smooth, nutty flavor. White beans are a good source of folate and manganese, as well as vitamin B1, phosphorus, copper, magnesium and iron.

A previously underutilized ingredient that is gaining popularity, white bean flour is a wonderful thickener for sauces and gravies, and a great base for dips and soups. This flour is especially good for those who want milk-free, gluten-free, low fat soups. Gluten Free Fluffy Pancakes or Waffles


  • 2 Egg Whites
  • 2/3 cup Brown Rice Flour
  • 1/3 cup White Bean Flour
  • 1 tsp Baking Powder
  • 2 Tb Sweet Cream Buttermilk
  • 1/2 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1 Tb Honey
  • 1/2 tsp Vanilla
  • 2 Tb Canola Oil
  • 3/4 cup Warm Water
  • 1/3 cup Tapioca Flour

  • Directions:
    Beat egg whites stiffly, set aside.
    Mix ingredients in order given, folding in egg whites last. Pour 2"-3" circles of batter onto a heated griddle that has been sprayed with a nonstick vegetable spray.
    Or ... pour 1 cup of batter into a preheated waffle iron that has been sprayed with a nonstick vegetable spray. Cook until golden brown. Serve with maple syrup or fresh fruit.
    Makes 8 pancakes or 4 waffles.

    Gluten Free Lemon Scones


  • 1 cup White Bean Flour
  • 1-1/2 cups White Rice Flour
  • 5 tsp Baking Powder
  • 2 tsp Xanthan Gum
  • 1/4 cup Honey
  • 1/2 cup Butter, cold
  • 2 Eggs
  • 1 Tbsp grated Lemon Peel
  • 1/3 cup fresh Lemon Juice
  • 1/2 cup Water

  • Directions:
    Step 1
    Preheat oven to 400 degrees, set aside an un-greased baking sheet.

    Step 2
    In a large mixing bowl combine flours, baking powder and xanthan gum; cut in butter with pastry blender.

    Step 3
    In another bowl mix together the honey, eggs, grated lemon peel, lemon juice and water. Add liquid mixture to the dry ingredients and stir with fork.

    Step 4
    Turn dough out onto a lightly floured surface and knead 10 times. Pat dough into round shape 1" thick and brush with lemon juice; sprinkle with 1 tablespoon of granulated sugar. Cut into wedges and place edges onto baking sheet and bake for 30 minutes. Makes 8 scones.
